Spinach Bread

1 1/2 teaspoons minced onion
1/2 teaspoon garlic powder
1 1/2 tablespoons olive oil
2 eggs, beaten
3/4 cup grated Parmesan cheese
2 (10 ounce) packages frozen spinach, thawed
1 loaf frozen bread dough
3/4 pound mozzarella or provolone cheese

Mix together onion, garlic powder, olive oil, egg and Parmesan. Squeeze out excess water from spinach.

Roll bread dough out to 1/2-inch thickness. Spread cheese mixture over dough. Spread spinach over mixture. Thinly slice mozzarella or provolone cheese. Cover spinach with sliced cheese. Roll up jellyroll fashion. Pinch edges and both ends. Bake on greased baking sheet at 350 degrees F for 30 to 40 minutes.

Slice and serve hot.

Spinach Bread

2 (10 ounce) boxes frozen spinach
8 ounces cream cheese
1 (6 ounce) container jalapeno cheese
1/4 teaspoon Creole seasoning
1 large loaf French bread
2 cups mozzarella cheese, shredded

Cook spinach; drain and pat dry to remove all liquid.

Preheat oven to 325 degrees F.

Melt cream cheese and jalapeno cheese and blend into spinach along with seasoning. Split bread loaf in half lengthwise. Lay open-faced on cookie sheet and spread evenly with spinach mixture. Cover with shredded mozzarella cheese and bake for 10 to 15 minutes or until cheese melts.

Slice and serve.
