Garlic Chicken2 cups white meat chicken, cut into bite-size pieces 1/2 cup sliced celery 1/2 cup green bell pepper chunks 1/4 cup chopped onion 1 1/2 teaspoons garlic powder (not garlic salt) 1 teaspoon salt 1/4 cup soy sauce 1 teaspoon cornstarch dissolved in 1/4 cup water Brown chicken in oil, cook 10 minutes. Add celery, bell pepper, onion, garlic powder and salt. Stir until vegetables are cooked but not soggy (3 to 5 minutes). Add soy sauce and stir. Add cornstarch/water. Serve with rice. Garlic Chicken2 teaspoons crushed garlic 1/4 cup olive oil 1/4 cup Italian seasoned bread crumbs 1/2 cup grated Parmesan cheese 2 boneless chicken breasts Preheat oven to 325 degrees F. Butter a shallow baking dish. Warm garlic and olive oil to blend flavors. Melt some butter in a baking dish (in oven) while warming. In a separate bowl, combine bread crumbs and Parmesan cheese. Dip chicken breasts into olive oil and garlic mixture, then into breadcrumbs and cheese mixture. Place into prepared baking dish, dipping both sides in melted butter. Bake for 45 minutes, turning chicken after 15 to 20 minutes. |
